This crustless quiche makes for a great appetizer! You can serve it up at parties to impress your guests without them ever knowing that they're saving calories!

For the quiche:
- 5 large eggs
- ¼ cup skim milk
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 1 tablespoon scallion greens.
- ¼ cup grated Parmesan cheese
- 3 ounces spicy Italian chicken sausage or turkey breakfast sausage
- 4 ounces fresh green chiles or 4-ounce can of diced green chilies
- 3 ounces grated cheddar cheese
For the avocado green chili sauce:
- 1 avocado
- 1 hot Hatch green chile roasted
- 1 handful of cilantro
- 1 clove garlic
- 1 scallion
- Juice of ½ lime
- 5 ounces fat free plain Greek yogurt
