Ingredients
- 1½ lb green tomatoes (about 3 large green tomatoes), sliced into ¼ -½" slices
- ⅓ cup low-fat buttermilk
- 1 tsp hot sauce
- ½ cup Panko breadcrumbs
- ¼ cup ground flax meal
- ¼ cup reduced-fat Parmesan cheese
- ½ tsp cayenne pepper
- ¼ tsp onion powder
- ¼ tsp garlic powder
- ¼ tsp paprika
- ⅛ tsp salt
- ⅛ tsp black pepper
- 6 Tbsp Light Buttermilk Ranch Dressing
- 1-2 tsp (or to taste) Sriaccha®

Instructions
- Preheat oven to 400 degrees. Lightly coat a baking sheet with nonstick cooking spray and set aside.
- Set up two shallow bowls. Fill one bowl with buttermilk and hot sauce. In the other bowl, combine Panko, flax, Parmesan, cayenne pepper, onion powder, garlic powder, paprika, salt and pepper — mix well.
- One at a time, submerge tomato slices in the buttermilk mixture and then transfer to the Panko mixture, lightly coat the tomato on both sides.
- Arrange tomato slices in a single layer on baking sheet and place in the oven for 15 minutes. Flip tomatoes and bake for another 15 minutes.
- Remove from oven. Combine (optional) Light Buttermilk Ranch Dressing with desired amount of Sriaccha®. Drizzle about a ½ Tbsp of spicy dressing on each tomato slice. Serve hot!
