Turkey Meatball Sliders

Prep Time: 10 minutes

Cook Time: 20 minutes

Serves: 4

Measurement Per Serving: 2 meatball sliders

Ingredients

  • 1 lb lean ground turkey
  • ¼ cup seasoned whole wheat breadcrumbs
  • ¼ cup reduced-fat Parmesan cheese
  • 1 large egg
  • 1 ½ Tbsp minced garlic
  • ½ tsp oregano
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup fresh parsley, chopped
  • ½ cup low-sugar pasta or marinara sauce
  • ½ cup low-moisture, part-skim, shredded mozzarella cheese
  • 8 whole grain slider buns toasted, for serving
  • 8 large basil leaves

Instructions

  1. Preheat oven to 375 degrees. Line a baking sheet with nonstick aluminum foil and set aside.
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, minced garlic, oregano, salt, pepper and parsley.
  3. Using your hands, mix ingredients until thoroughly combined. Roll the mixture into balls (about the size of a billiard ball), forming about 8 meatballs.
  4. Place meatballs on baking sheet and bake for 20 minutes, flipping halfway through.
  5. Remove meatballs, set aside. Set oven to broil. Spray a new baking sheet with cooking spray. Split the buns in half and place on baking sheet. Spoon 2 Tbsp of mozzarella cheese on the bottom halves. Cook buns under broiler until lightly golden and the cheese has melted, about 30 seconds to 1 minute, keeping the oven door cracked.
  6. Remove lightly toasted buns and assemble your sliders: lay buns side-by-side (inside facing up). Place a meatball on top of each melted cheese half. Cover meatball with 1 Tbsp pasta sauce and add 1 basil leaf, and then cover with the top bun.
  7. Serve with remaining pasta sauce.
  8. Tip: After assembling, stick a toothpick through to keep meatball slider assembled until served.
